Ham, Cucumber & Pickled Jalapeno Sub

Ingredients:
3 pounds of potatoes, peeled and quartered
3 cups of vegetables; onions, peas and carrots are traditional
butter or olive oil
milk, vegetable stock, chicken stock, or water
salt & pepper to taste
Boil the potatoes until tender enough to mash. Meanwhile, sautee or sweat the vegetables. When the potatoes are done, drain them, then add in the vegetables, butter/oil, and milk/stock/water. Mash with a hand-held potato masher. This is where the recipe gets its name; in Dutch, stamp means “to mash”. To stamppot is to mash the pot.
