Ham, Cucumber & Pickled Jalapeno Sub

Ingredients:
2 pounds tomatoes, halved or quartered
2 shallots, diced
2 tablespoons maple syrup
1 tablespoon aged balsamic (the sweeter, the better)
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
Heat up some oil in a pot and sautée the shallots until they are starting to brown. Add the rest of the ingredients and cook until most of the water is gone from the tomatoes. Blend to desired consistency. Store in the refrigerator. Works well as a condiment for cheese.
